½ cup Unsalted Butter
1 ¼ cup Granulated Sugar
¼ teaspoon Salt
1 ¼ cup All-Purpose Flour Make it Gluten Free! Switch out regular flour for a Gluten Free 1-1 Baking Flour
1 teaspoon Baking Powder
¼ teaspoon Baking Soda
2 tablespoons Cocoa Powder
1 cup Buttermilk
1 tablespoon White Vinegar
1 ½ teaspoons Vanilla Extract
2 Eggs
2 tablespoons Red Food Coloring
For the Cream Cheese Frosting
1 cup Cream Cheese
1 ¼ cup Powdered Sugar
½ teaspoon Vanilla Extract
1 tablespoon Milk of Choice

Directions

Preheat Oven

Preheat the oven to 350ºF & prepare the cupcake tray with cupcake liners. Set to the side.

Cream Butter & Sugar

Using a stand mixer fitted with the paddle attachment or a medium bowl with a rubber spatula, cream the butter, granulated sugar, and salt on low speed until light and fluffy.

Add the Dry Ingredients

Next, sift and add in the all-purpose flour, baking powder, baking soda, and cocoa powder. Mix until incorporated, the texture will resemble sand at this point. Set aside.

Combine the Wet Ingredients

In a separate medium bowl, whisk together the buttermilk, white vinegar, vanilla extract, eggs, and food coloring. Once the wet mixture is smooth and a bright red color, add it to the dry ingredients. Mix slowly until just combined, making sure to not overmix the batter.

Bake the Cupcakes

Using a 2 oz ice cream scoop, scoop the batter into the prepared lined cupcake tray. Bake at 350ºF for 25-30 minutes or until a toothpick coming out clean.

While the cupcakes are baking, prepare the cream cheese frosting. In a medium bowl, cream together the powdered sugar and cream cheese until well blended. Then, add in the vanilla extract and your choice of milk mixing until silky and smooth.
