3 lbs Russet Potatoes
1 cup Unsalted Butter
3-4 sprigs Fresh Rosemary
5 cloves Garlic, peeled & smashed

Directions

Boil the Potatoes

Place the peeled and chopped Russet potatoes in a large pot and cover them with cold water. Add a pinch of salt to the water. Bring the water to a boil over medium-high heat and cook the potatoes until they are fork-tender, usually about 15-20 minutes.

Infuse the Butter

While the potatoes are boiling, start to infuse the butter. In a small saucepan, add the butter, garlic, and fresh rosemary sprigs over low heat. Allow the mixture to simmer for about 20-30 minutes, ensuring the flavors of the garlic and rosemary infuse into the butter. Once infused, remove the saucepan from heat and strain the butter to remove the rosemary and garlic bits, leaving behind the flavorful infused butter. Set aside.
