Ingredients for Chocolate Chip Pancakes

The recipe for these pancakes is simple and straightforward, requiring only a few basic ingredients that you probably already have in your pantry! Here’s what you’ll need:

– All-Purpose Flour 

– Granulated Sugar

– Salt

– Baking Powder

– Egg

– Vanilla Extract 

– Milk 

– Unsalted Butter

– Semi-Sweet Chocolate Chips (I used mini)

The Secret to Making the Fluffiest Pancakes

Don’t overmix the batter. Yes, you heard me right! It’s tempting to whisk it like there’s no tomorrow, but resist the urge. Overmixing can lead to tough pancakes, and we definitely don’t want that. Instead, gently stir the ingredients until they just come together, leaving some lumps in the batter.

Allow the batter to rest for a few minutes. This magical resting period allows the leavening agents to work their magic and create those lovely air pockets that make pancakes light and fluffy. While you wait, preheat your skillet or griddle over medium heat and grease it lightly with butter or cooking spray. Once it’s hot and ready, ladle the batter onto the skillet and let the pancakes cook until you see those beautiful bubbles forming on the surface.

¼ tsp Salt
½ tbsp Baking Powder
1 Egg
½ tsp Vanilla Extract
1 cup Milk of choice
2 tbsp Unsalted Butter, melted
½ cup Semi-Sweet Chocolate Chips, mini

Prepare Dry + Wet Ingredients

In a large mixing bowl, combine the all-purpose flour, granulated sugar, salt, and baking powder. Whisk the dry ingredients together until well combined, and set aside. In a separate bowl, whisk together the egg, vanilla extract, milk, and melted butter, until well blended.

Combine Dry + Wet Ingredients

Add the wet mixture to the dry ingredients. Stir gently until just combined. It's important not to overmix; a few lumps are perfectly fine. Gently fold in the chocolate chips into the pancake batter, ensuring an even distribution.

Cook the Pancakes

Heat a non-stick skillet or griddle over medium heat. If needed, lightly grease the surface with butter or cooking spray. Once the skillet is hot, using a 2 oz cookie scoop or ¼ cup to pour pancake batter onto the skillet for each pancake. At this point add more chocolate chips if desired. Cook until bubbles form on the surface, around 2-3 minutes. Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes, or until the pancakes are golden brown and cooked through.
