A classic chocolate cookie, but with an extra fudgy base made from melted chocolate and (of course) a generous helping of chocolate chips mixed in. Honestly, these are borderline brownies in the shape of a cookie, rich, indulgent, and perfect for all the chocolate lovers out there!

Only 12 ingredients are needed to bring these chocolate cookies to life! The best part, the majority are baking basics that you probably already have in your kitchen. Here’s what you’ll need:

– All-Purpose Flour

– Baking Powder

– Salt

– Unsweetened Cocoa Powder

– Unsalted Butter

– Unsweetened Chocolate

– Eggs

– Granulated Sugar

– Brown Sugar

– Vegetable Oil

– Vanilla Extract

– Semi-Sweet Chocolate Chips

Tips for the Best Chocolate Cookies

Use the Right Chocolate: There are so many options when it comes to chocolate (semi-sweet, bittersweet, unsweetened, etc.) it can be hard to choose which type will be the best! Opt for the best ingredients you can find, a good unsweetened cocoa powder (i use this one!), semi-sweet chocolate chips, and quality unsweetened chocolate bar for baking (like this one!) can make a world of difference.

Don’t Overmix: Once you add the flour mixture to the wet ingredients, mix until just combined. Overmixing can lead to tough cookies, and we want them to be soft and chewy.

Scoop Evenly: Use a cookie scoop or a spoon to portion the dough into equal-sized mounds. This ensures that all the cookies bake uniformly.

Top it off: For an extra gooey chocolate touch, top the rolled out cookie dough with more chocolate chips before putting them in the oven

Timing is Everything: Keep a close eye on the cookies while they bake, since thee cookies are meant to be rich and gooey, you want to avoid over baking them.

1 cup All-Purpose Flour
1 teaspoon Baking Powder
¼ teaspoon Salt
¼ cup Unsweetened Cocoa Powder
½ cup Unsalted Butter
1 cup Unsweetened Chocolate Bar, chopped
2 Eggs, room temperature
¾ cup Granulated Sugar
¼ cup Brown Sugar
1 tablespoon Vegetable Oil
1 teaspoon Vanilla Extract
1 cup Semi-Sweet Chocolate Chips

Directions

Preheat Oven & Combine Dry Ingredients

Preheat the oven to 350ºF. Line baking sheets with parchment paper. Set to the side. In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and cocoa powder. Set to the side.

Melt Butter & Chocolate

Melt the chopped unsweetened chocolate and butter together using the double boiler method or microwaving at 20-second intervals mixing in between. Once melted set aside and allow to cool.

Combine Sugars & Wet Ingredients

Using a stand mixer fitted with the paddle attachment or a bowl with a rubber spatula, mix the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until fully combined. Be sure not to over mix the batter as this can result in a cake-like texture.

Add Melted Chocolate & Dry Ingredients

Next, add the melted chocolate mixture, and stir until incorporated. Fold in the dry ingredients until just combined. Once combined carefully fold in the chocolate chips to the cookie dough.

Bake the Cookies

Using a 2 oz cookie scoop, scoop the cookies onto the baking sheets, leaving about 1 ½ inches of space between them. Bake for 8-10 minutes at 350ºF. Be sure not to over bake the cookies or they will become cake-y. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a cooling rack to cool.
