– San Marzano Tomatoes 

– Vegetable Stock or Water

cup Extra Virgin Olive Oil
1 cup Yellow Onion, peeled & diced
1 cup Carrots, peeled & diced
2 teaspoons Dried Basil
56 ounces San Marzano or Italian-Style Plum Tomatoes in Juice
4 cups Vegetable Stock or Water
2 cups Heavy Whipping Cream
½ ounce Fresh Basil Leaves
to taste Salt & Pepper

Directions

1.

Soften the ingredients

In a pot, heat up oil and add in onions & carrots, cook for 3-4 minutes on med/high heat or until softened, once softened add salt, pepper, & dried basil.
Mark as complete

Simmer the soup

Add in tomatoes & vegetable stock and allow to cook for 20-25 minutes on a low simmer
Mark as complete

Blend & Serve

Add in a heavy whipping cream & fresh basil leaves, then use a blender, food processor, or stick blender to puree the soup. Serve in bowls, topped with fresh basil and with a side of classic grilled cheese or garlic parmesan crostinis.
