Ingredients for Cosmic Brownie Cookies

No space travel needed to secure the ingredients for these cookies, your pantry staples will do the trick. Here’s what you will need to make these cookies: 

– All-Purpose Flour 

– Baking Powder 

– Salt 

– Unsweetened Cocoa Powder 

– Eggs

– Granulated Sugar 

– Dark Brown Sugar

– Vegetable Oil 

– Vanilla Extract 

– Unsalted Butter

Whether you have frosted your cookies or not, it is best to store these brownie cookies at room temperature in an air-tight container to prevent them from drying out.

Ingredients

Adjust Servings
1 cup All-Purpose Flour
1 teaspoon Baking Powder
pinch Salt
¼ cup Unsweetened Cocoa Powder
2 Large Eggs, room temperature
¾ cup Granulated Sugar
¼ cup Brown Sugar
1 tablespoon Vegetable Oil
1 teaspoon Vanilla Extract
½ cup Unsalted Butter
1 cup Semi-Sweet Chocolate Chips

Directions

1.

Preheat Oven

Preheat the oven to 350ºF. Line a baking sheet with parchment paper. Set to the side.

Melt butter & add chocolate

In a small saucepan or double boiler method, melt the butter and chocolate chips together, mixing with a spatula until completely melted and smooth. Set aside, allow to cool.

Mix wet ingredients

Using a stand mixer fitted with the paddle attachment, mix the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract until just combined.

Combine Wet & Dry Ingredients

Sift & add the all-purpose flour, baking powder, salt, and cocoa powder to the wet ingredients. Mix until incorporated. Then, add the melted chocolate and stir until just combined. The consistency will be similar to a thicker brownie batter.

Bake the Cookies

Refrigerate the dough for about 10- 15 minutes before baking. Using a 2 oz cookie scoop, scoop the cookies onto the baking sheets, leaving about 2 inches of space between them. Bake for 8-10 minutes at 350ºF or until the tops of the cookies have a shiny, crackly top to them.

Cool, Frost, & Serve!

Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a cooling rack to cool. Once the cookies have completely cooled, top with chocolate frosting and the iconic chocolate rainbow sprinkles.
