Cookies & Cream Ice Cream Sandwiches

The classic cookies and cream duo as an ice cream sandwich that is A LOT more cookie than cream.

What are Cookies & Cream Ice Cream Sandwiches?

Can’t go wrong with the classics, right? So why not combine them! The classic sweet treats: cookies & cream ice cream and chocolate chip cookies, come together just in time for summer! Thick, soft, chewy cookies packed full of crumbled Oreos and white chocolate chips with the perfect creamy vanilla ice cream sandwiched between. Big enough to share, but honestly after the first bite, you won’t want to!

Ingredients for Ice Cream Sandwiches

Making delicious desserts doesn’t mean it has to be complicated. These ice cream sandwiches only contain 10 ingredients, the majority being baking basics that you have in your kitchen. Here’s what you’ll need:

– Unsalted Butter

– Granulated Sugar

– Brown Sugar

– Eggs

– Flour

– Baking Soda

– Salt

– White Chocolate Chips

– Oreo Cookies

– Vanilla Ice Cream*

*Vanilla ice cream gives it the classic milk and cookies feel, but any flavor of ice cream will taste just as amazing! Some non-vanilla suggestions: Cookies & Cream, Chocolate, Coffee, Strawberry!

Tips to prevent your cookies from overbaking

Check-in on your cookies halfway through baking. Since everyone’s oven is different, the recommended bake time can vary. Set your timer to half of the recommended bake time (i.e. recommended bake time is 10 minutes set a timer for 5 mins). Once the timer goes off, check on the cookies and assess how they are baking.

Are they still basically raw? Add more to the recommended time and keep checking in on them.

Are the edges flattening out, but the top is gooey? Continue baking and follow the recommended time.

Are the edges getting golden brown with a flat and set top? Get your oven mitt ready, those are done!

Watch the edges of the cookies. Once the cookies have golden edges and the top is set, get ready to take them out of the oven. 

Be aware of carry-over cooking. Carry-over cooking refers to the rest time after food is removed from heat and continues to cook inside. Although this concept often applies to meat, it also occurs within baked treats. Remove cookies from the oven a little earlier, to prevent overbaking them. The cookies will continue to slightly cook once you remove them from the oven, due to carry-over cooking.

How to store ice cream sandwiches

Depending on whether or not you have assembled the ice cream sandwiches, there are two ways to store these cookies:

1. Before Assembly: If you have yet to assemble the ice cream cookie sandwiches (or just want to enjoy the cookies on their own), once the cookies have completely cooled, store them at room temperature in an air-tight container.

2. After Assembly: If your ice cream cookie sandwiches have been assembled, individually wrap each sandwich with parchment or wax paper and store in the freezer for up to 3 months.

Ingredients

1 cup unsalted butter
1 cup granulated sugar
¾ cup brown sugar
2 eggs
2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
½ cup white chocolate chips
1 cup oreos, crushed
6 scoops vanilla ice cream

Directions

Prep the cookie dough

Preheat the oven to 350°F & line baking sheets with parchment paper. In the bowl of a stand mixer, beat butter, granulated sugar, and brown sugar on high until smooth and fluffy, about 2-3 minutes. Add eggs and beat until combined. Then, add the flour, baking soda, and salt and mix on low-medium speed until combined. Stir in the white chocolate chips and crushed oreos.

Bake the cookies

Using a 2 oz cookie scoop, roll out the dough and place 2” apart on a baking sheet. Bake at 350°F for 10-15 minutes, or until slightly golden. Allow at least 10 minutes until slightly cooled to handle and transfer to a cooling rack.

Assemble the cookie sandwiches

Once the cookies have completely cooled, it's time to assemble the ice cream sandwiches! To assemble, add one scoop of vanilla ice cream to the bottom of one cookie and top with another cookie to create an ice cream sandwich!
