For the Pesto Dressing:

– Pine Nuts 

– Extra Virgin Olive Oil 

– Fresh Parmesan Cheese

– Salt & Pepper

– Lemon Juice

1 lb Fusilli Pasta, cooked
1cup Mozzarella Pearls
2 cups Cherry Tomatoes, halved
½ cup Basil Leaves, freshly chopped
Balsamic glaze (optional)
For Pesto Dressing:
2 cups Basil Leaves, fresh
3 Garlic Cloves
¼ cup Pine Nuts
cup Extra Virgin Olive Oil
cup Parmesan Cheese, freshly grated
Salt & Pepper, to taste
Lemon Juice, to taste

Directions

1.

Cook the Pasta

Bring a large pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions until al dente. Drain the cooked pasta and rinse under cold water to stop the cooking process. Set aside.

In a blender or food processor, blend together the basil leaves, garlic cloves, and pine nuts until combined. Slowly, drizzle in the oil. Stir in parmesan cheese, lemon juice, and salt.
