Cinnamon rolls but make them savory! These Cheesy Garlic Rolls are the perfect combination of soft fluffy dough, two cheeses (making for the ultimate cheesy experience), and of course garlic! Whether you’re hosting a gathering or simply craving comfort food, these rolls are sure to satisfy your taste buds. 

What are Cheesy Garlic Rolls?

These Cheesy Garlic Rolls are a savory twist on Cinnamon Rolls, but instead of sweet, you get a burst of cheesy, garlicky goodness! The familiar warm, fluffy brioche-style dough filled with ooey-gooey melted cheese from both mozzarella + parmesan cheese, and heaps of garlic making every garlic lover’s dreams come true.

Ingredients for Cheesy Garlic Rolls 

As extra as these rolls may seem, the ingredients mainly include baking pantry basics. Here’s what you’ll need to whip up a batch:

For the dough: 

– Water 

– Instant Dry Yeast  

– Granulated Sugar 

– Eggs 

– Salt 

– Garlic Powder

– Unsalted Butter

– All Purpose Flour 

*Note: You can either make your own dough from scratch or use pre-made pizza dough from the store (I prefer to make my own so I can add extra garlic to the dough). Either way, choose the one that suits your fancy!

For the filling: 

– Unsalted Butter

– Fresh Garlic

– Garlic Powder

– Dried Basil

– Parmesan Cheese

– Mozzarella Cheese

What to Serve with Cheesy Garlic Rolls?

These rolls are versatile and can be enjoyed in various ways. Here are a few delightful options to serve alongside: 

Pasta: When I think of garlic bread, my first thought is PASTA! The perfect accompaniment to any pasta dish. They will pair perfectly alongside a bowl of spaghetti, lasagna, or even a creamy Alfredo. They’ll soak up the sauce and provide a heavenly garlic-cheese explosion with every bite.

Soups: Warm, comforting soups are best friends with garlic rolls. Dip them into a steamy bowl of Creamy Tomato Basil Soup for another take on the classic grilled cheese + tomato soup duo!

Salads: Yes, you heard it right! These Cheesy Garlic Rolls can even make a salad shine. Serve them alongside a fresh green salad or even this Caprese Pasta Salad. The contrast of the crunchy greens with the soft, cheesy rolls will take your salad experience to a whole new level.

Ingredients

½ cup Unsalted Butter, softened
3cloves Garlic, fresh & minced
1 tbsp Garlic Powder
2 tsp Dried Basil
½ cup (+extra for topping) Parmesan Cheese, fresh & grated
½ cup (+extra for topping) Mozzarella Cheese
For the dough:
½ cup Water
2 tbsp (1 packet) Instant Dry Yeast
½ tbsp Granulated Sugar
2 Eggs
½tbsp Salt
1tbsp Garlic Powder
½ cup Unsalted Butter
4cups All-Purpose Flour

Directions

Preheat Oven + Prep Filling

Preheat your oven to 345ºF and lightly grease a baking dish or line it with parchment paper. In a small bowl prepare your filling, mix together the butter, fresh garlic, garlic powder, and dried basil until well combined. Set aside.

Start Preparing the Dough

In a large mixing bowl or stand mixer bowl, fitted with the hook attachment combine the water, yeast, sugar, milk, eggs, salt, and garlic powder. Add the cubes of butter and mix until just combined, it is okay if there are still some little cubes/pieces of butter.

Add the Flour

Next, add the flour, stirring on low until the dough comes together and starts to pull away from the sides of the bowl.

Knead the Dough

Lightly flour a clean surface and turn out the dough. Knead it gently for about a minute until it becomes smooth. If the dough is too sticky, add a little more flour, 1 tablespoon at a time, until it is manageable. It should slowly bounce back up when poked. At this point, you can either move on to the next step or place the dough in a bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour until ready to roll out and bake them (this is NOT a required step).

Roll Out Dough + Add Filling

Roll out the dough into a rectangular shape, about 1/4 inch thick. Spread the softened garlic butter filling evenly over the dough, leaving a small border around the edges. Sprinkle the parmesan cheese and mozzarella cheese filling mixture over the buttered dough, evenly covering it completely. Slightly pat down the cheese into the butter to stick.

Cut into Rolls

Starting from one of the long ends of the rectangle, tightly roll up the dough into a log, pinching the bottom together once you reach the end. Using a sharp knife or a piece of unflavored dental floss, cut the dough into 8 even rolls. Place the roll slices in the greased baking dish, leaving a little space between each one (it’s okay if there seems to be a lot of space between them)

Bake the Rolls

Bake in the preheated oven for 30-40 minutes, or until the rolls have turned golden brown. 5 minutes before pulling the baked rolls out of the oven, top them with more parmesan and mozzarella cheese to finish with melted cheese. If you are not ready to serve yet, take the rolls out without topping them with cheese, then 5 minutes before you are ready to serve, top them with cheese, pop them back in the oven to heat up and melt the cheese.

Brush with Garlic Butter + Serve

In a small bowl, create a garlic butter topping by mixing together 2-3 tbsp melted unsalted butter, 1 clove of garlic, fresh & minced, and 1 tsp of dried basil. Once the rolls have cooled slightly, brush the melted butter mixture over the top of the savory garlic cheese rolls. Serve warm and savor the aromatic combination of garlic, melted cheese, and fluffy dough.
